Mini Rainbowy Strawberry Shortcakes
These tiny shortcakes look straight out of a fairy garden. Sweet berries, glossy with jam, and a sprinkle of rainbow petals make them almost too pretty to eat.
Ingredients
- 6 mini shortcake shells or slices of pound cake
- 2 cups chopped strawberries
- 2 tbsp strawberry or raspberry jam
- Whipped cream (to taste)
- 1–2 tsp Leafie & Suns Rainbow Flower Sugar
Directions
- Warm the jam in the microwave for about 15 seconds, just until melted.
- Toss chopped strawberries in the warm jam to coat.
- Spoon the glazed berries onto shortcake shells or pound cake slices.
- Add a generous dollop of whipped cream.
- Finish with a sprinkle of Rainbow Flower Sugar for a little floral sparkle.
Serve these at your next garden party and watch them disappear with lots of happy crumbs.
