Mini Rainbowy Strawberry Shortcakes

These tiny shortcakes look straight out of a fairy garden. Sweet berries, glossy with jam, and a sprinkle of rainbow petals make them almost too pretty to eat.

Ingredients

  • 6 mini shortcake shells or slices of pound cake
  • 2 cups chopped strawberries
  • 2 tbsp strawberry or raspberry jam
  • Whipped cream (to taste)
  • 1–2 tsp Leafie & Suns Rainbow Flower Sugar

Directions

  1. Warm the jam in the microwave for about 15 seconds, just until melted.
  2. Toss chopped strawberries in the warm jam to coat.
  3. Spoon the glazed berries onto shortcake shells or pound cake slices.
  4. Add a generous dollop of whipped cream.
  5. Finish with a sprinkle of Rainbow Flower Sugar for a little floral sparkle.

Serve these at your next garden party and watch them disappear with lots of happy crumbs.
