Garden Herb Roasted Potatoes
Sometimes the simplest things are the most magical. These roasted potatoes come out crispy on the edges, tender inside, and full of cozy garden flavor — no pre-boiling required.
Ingredients
- 1 lb potatoes, cut into bite-sized pieces
- 3 tbsp olive oil
- ½ cup water (enough to reach about ¼ inch in your pan)
- 1–2 tsp Leafie & Suns Garden Herb Salt (added near the end)
Directions
- Preheat oven to 425°F.
- Spread the potatoes in a 9×13 baking pan or sheet pan. Drizzle with olive oil and stir to coat evenly.
- Add water until it comes about ¼ inch up the sides of the pan.
- Roast for 20 minutes, then stir. Roast another 20 minutes, keeping an eye on them toward the end.
- Sprinkle with Garden Herb Salt during the last 10 minutes of roasting (or to taste).
- Serve warm and try not to eat them all straight from the pan.
Perfect for lazy Sunday dinners or any night when you want the house to smell like heaven.
