Garden Herb Roasted Potatoes

Sometimes the simplest things are the most magical. These roasted potatoes come out crispy on the edges, tender inside, and full of cozy garden flavor — no pre-boiling required.

Ingredients

  • 1 lb potatoes, cut into bite-sized pieces
  • 3 tbsp olive oil
  • ½ cup water (enough to reach about ¼ inch in your pan)
  • 1–2 tsp Leafie & Suns Garden Herb Salt (added near the end)

Directions

  1. Preheat oven to 425°F.
  2. Spread the potatoes in a 9×13 baking pan or sheet pan. Drizzle with olive oil and stir to coat evenly.
  3. Add water until it comes about ¼ inch up the sides of the pan.
  4. Roast for 20 minutes, then stir. Roast another 20 minutes, keeping an eye on them toward the end.
  5. Sprinkle with Garden Herb Salt during the last 10 minutes of roasting (or to taste).
  6. Serve warm and try not to eat them all straight from the pan.

Perfect for lazy Sunday dinners or any night when you want the house to smell like heaven.
